Cutting Preference
Bombay Bhetki fillet is a boneless, skinless fish cut prepared from fresh Bhetki, with the bones and skin carefully removed. Its firm yet tender texture and mild, delicate flavour make it ideal for fish fry, fish fingers, paturi, butter fry, BBQ, grilling, roasting and curries. The fillet is convenient to cook and produces clean, meaty portions with minimal wastage.
Fresh Bombay Bhetki fillets should have a clean, mild sea-fresh aroma, firm and moist flesh, and a natural white to slightly pinkish appearance. The flesh should spring back when gently pressed and should not feel excessively soft, slimy or watery. Keep refrigerated at 0–4°C and cook as soon as possible for the best taste, texture and freshness.
Bombay Bhetki is a good source of high-quality protein and provides important nutrients including vitamin B12, selenium, phosphorus and niacin (vitamin B3). It also contains beneficial omega-3 fatty acids, although the amount varies depending on the fish and preparation. As a naturally lean fish, it can be a nutritious choice for a balanced diet, particularly when grilled, baked or lightly cooked rather than deep-fried.
