Cutting Preference
Freshwater Charapona has silvery scales, tender white flesh and a mild, delicate flavour. Larger pieces provide more substantial portions and work particularly well in traditional Bengali macher jhol, curry and light gravy preparations.
Clear, bright—not cloudy—eyes Bright red/pink, moist gills Firm flesh that springs back when pressed Shiny, firmly attached scales Clean, mild freshwater smell rather than a strong sour/ammonia odour Keep the fish refrigerated immediately after purchase; one Kolkata fish retailer recommends consuming cleaned fish within 3–4 days when properly refrigerated.
Because Charapona is commonly sold as young Rohu/similar freshwater carp, nutrition varies with species and preparation. For reference, FAO's Indian food-composition data for raw river Rohu lists approximately 90 kcal, 16.6 g protein and 2.7 g fat per 100 g. Approx per 100 g raw edible fish: Calories: ~90 kcal Protein: ~16–18 g Fat: ~2–3 g Carbohydrates: ~0 g Provides useful fish protein and minerals.
