1.8kg–2kg chicken can be divided into approximately 20–26 bone-in curry pieces, including: Breast pieces Leg/thigh pieces Drumsticks Wings Back/rib pieces Neck and smaller bone-in pieces If you want medium-sized, restaurant-style curry pieces, around 22–24 pieces is a practical target.
Fresh chicken should have: Light pink to pinkish flesh, not grey or greenish Mild/neutral smell, not sour, ammonia-like or strongly unpleasant Meat that feels firm and springy, not excessively soft or slimy No sticky/slimy coating Packaging/container should not have excessive liquid leakage Keep raw chicken refrigerated at ≤4°C and cook promptly; if it has been left at room temperature for an extended period, freshness cannot safely be judged by appearance alone.
