Raw Kolkata Bhetki Butter-Fry Cut is made from fresh, boneless Bhetki fillet, cut into compact, medium-thick portions suitable for shallow frying, pan-frying or breadcrumb-coated fish fry. The flesh should have a naturally pale pink/white colour, firm texture and clean, mild aroma. Bhetki is particularly popular for Bengali-style fish fry because of its delicate flavour and relatively low bone content.
Firm, moist flesh that springs back when pressed Natural pale pink/white colour Clean, mild fresh-fish smell — no sour or ammonia-like odour No excessive liquid or sliminess Clean, hygienically prepared fillets Specifications for Bhetki fillets describe fresh fillets as firm, pinkish and evenly textured, while general fish-freshness guidance recommends firm flesh and absence of unpleasant odour.
